mango tarragon frappe

One of my all time indulgences is ice cream- prior to becoming vegan I use to make homemade ice cream at least once a week. I still have not perfected the ultimate homemade vegan ice cream recipe, so I resort to store bought. Growing up I always passed on the birthday cake opting for a double serving of ice cream, when I did have a small piece of cake I love mixing it with my melty ice cream. 

It was a total game changer once ice cream cakes became popular, quickly my yearly birthday cake was an ice cream cake. So when So Delicious contacted me to sample their new line of sugar free and gluten free ice cream I couldn't resist. So Delicious has been a staple in our home since becoming vegan- ice cream and coconut yogurt are favorites, oh and I can't leave out the chocolate coated vanilla ice cream bars!

In New England you will often find Frappes on Diner menus and summer roadside food shacks. A Frappe is a really thick milk shake that is best enjoyed with a spoon or extra large straw. It is a combination of milk and ice cream and often time fresh fruit or chocolate syrup. 

Mangoes are super abundant and cheap at the moment as is the fresh tarragon in the Garden. Fresh herbs added to a Frappe is a new twist on an old favorite and I must admit pretty awesome.

The new line of no sugar added ice cream from So Delicious is pretty tasty and as the bonus of having less calories than your traditional vegan ice cream, plus it is non GMO, gluten free, soy free, kosher and organic.

We also had the chance to sample a new gluten free cookies and cream along with cookie dough ice cream- those were also amazing!

I am so jealous of those who live in a climate where it basically pours mangoes- mangoes everywhere, for free! Parks, on the side of the road, in your backyard- you folks are seriously lucky. I could totally eat mango all day. 

If you aren't a fan of mango {you are crazy} sub in your favorite summertime fruit. Really any fruit you would use in a smoothie would work.

The Cinnamon adds a nice little kick of  flavor- I pretty much put cinnamon in anything I can get away with. By far, cinnamon is my most used spice in the cabinet, next to turmeric and cumin.

Mango Tarragon Frappe
serves 2

you will need:
2/3 cup ice cream

1 mango- pitted and peeled

1 tsp cinnamon

1/4 - 1/2 cup non dairy milk/ more or less depending on how thick you like your frappe

1-2 tsp fresh tarragon

assembly:
Place all ingredients in a blender or food processor and blend until smooth and creamy.
Enjoy with a spoon or extra wide straw!
