My breakfast routine doesn't vary greatly, weekday mornings consist of a bowl of yogurt topped with fresh fruit and granola, on Saturday's during the cold winter months I love cream of wheat or oatmeal drizzled with pure NH maple syrup and of course on Sundays. well that's our big breakfast day. On occasion I like to switch up my Saturday morning routine - I had a beautiful pomegranate sitting on the counter, the ruby red seeds just begging to be unleashed. A while back I had experimented with a coconut quinoa pudding - this recipe is a spin off from that, just a tad simpler.

lentil tacos
Justin has the benefit of coming home everyday for lunch- on the occasions I have a weekday off I look forward to surprising him with a hot lunch that we get to enjoy together . After Christmas I was able to take a few days off which was welcomed with open arms after all the crazy holiday excitement, Justin unfortunately had to head back to work. To make his day a little brighter I made a favorite of his - tacos! These tacos were a bit different than he was use to, instead of black beans or his beloved veggie crumbles Spanish pardina lentils were subbed in. I know that this isn't a "new" idea using lentils as a filler for tacos, but it certainly was a first for us. Let me tell you, it may have been a first but it certainly wasn't the last - they were amazing!

persimmon granola
The start of a new year always brings out the thrifty in me. Maybe its due from all the excess and spending from the holiday season, this time of year I find frugal self again by way of batch dry bean cooking, granola making & an attempt at reigning in the non existent grocery budget - more like creating and sticking to a weekly grocery budget (has anyone else seen a crazy increase in food, have I just been blind for the past year and not noticed until now?).
