thai lettuce wraps
I am so honored to be invited to the Sweet Life today while Miss Sarah
takes some well deserved time to spend with too cute for words little
Nash. Sarah is absolutely amazing; if anyone deserves the title of super
Mom she sure does! Raising a toddler with a newborn and being able to
not only function but continue to create beautiful recipes and photos is
beyond incredible to me. I am so happy to be able to lend a hand and
share a quick, easy and healthy recipe with you today at the Sweet Life. When life gets crazy {which I am sure all of us can find ourselves in midst of craziness once in a while} I love having a go to dinner that doesn't require a whole lot of thought. Head over to The Sweet Life to check out the rest of this post and to get this quick and easy recipe! |

almond butter truffles
Oh my gosh, where did the time go? I thought I was ahead of the game, but alas Valentines Day is tomorrow and I am just getting around to sharing this amazing almond butter truffle with you. Lucky for you these are incredibly easy to make, so easy you could whip up a batch tonight or tomorrow afternoon just in time to share with your loved ones.

thai inspired coconut quinoa soup
We are in the home stretch of winter and just received another round of snow, hopefully this will be the last major storm of the season; however here in the New England it is very possible to see a freak snow storm in the middle of May. Bright soups and stews help get us through these last few months of cold- the brighter the better. One of the best ways to add color to your winter plate is by way of bright red/purple cabbage, orange carrots and dried chilies, luckily I am able to source these directly from our winter farmers market.
So in between exploring the ice castles in Lincoln, weekend snow shoe hikes and scrabble nights you will find me with a bowl of this warming soup anxiously awaiting spring.

raspberry lime chili sea salt
So this is not your traditional Valentines Day recipe, but it kinda does fit...pink, a little sweet and spicy, this salt is guaranteed to heat up any dish on Valentines Day. Give a little jar along with a box of dark chocolate truffles to those that may need a little Valentines Day loving.
This salt would absolutely be incredible sprinkled over dark chocolate bark, sea salted brownies, as a cocktail rimmer or used in a salted caramel and drizzled over vanilla vegan ice cream!

sweet & sour tofu spring rolls
I absolutely love spring rolls; to think a couple years back I was intimidated to try my hand at making a basic spring roll. Don't let the paper thin wrappers scare you off, they are quit forgiving. Plus the more you make them the easier they are to roll, all you have to do is get your own rolling technique down. The beauty of a spring roll ; the endless filling possibilities. Check out this version & this one - both are incredibly easy to make and please most crowds. You really can't go wrong with fresh veggies, some sort of protein such as quinoa or tofu; crispy mushrooms or avocado are also insanely good!
