i have a really bad habit of buying loads upon loads of beautiful vegetables, especially this time of year. between my CSA, the 2 farmers markets that i frequent each week and my garden we are bursting at the seems with amazing produce and fruits. so my goal each week is to see how many veggies i can cram into one meal. thus, the farmers market taco was born.

fresh corn cut straight off the cob, beautiful heirloom tomatoes, hot & green peppers, kohlrabi and black olives make up this fun, flavorful and colorful no cook taco filling.
 freshly picked oregano and chives brighten up the entire dish.

did you know that freshly picked sweet corn is delish even without cooking - seriously sweet raw corn is amazing. just be sure that it is as fresh as possible before the sugars begin converting into starch.
and kohlrabi is such a fun and interesting veggie - raw or roasted you really can't go wrong. Kohlrabi is actually part of the brassica family, closely related to the turnip.

the veggies are simply prepared and tossed with black beans for some added protein.
if you are feeling jazzy, squeeze a bit of lime juice and a sprinkle of cumin.

the olives add a nice salty bite to the sweet veggies, the perfect addition to taco night!

for a completely raw meal, skip the tortillas and wrap the filling in a lettuce or collard leaf.

throw in a generous helping guacamole and you have yourself an super easy, nutritious and amazingly tasty meal - all without breaking a sweat.

Farmers Market Tacos
makes 6 tacos

you will need:
1 Kohlrabi - peeled and cubed
2  ear's of corn corn - shucked and kernels cut off the cob
assortment of heirloom tomatoes - 1-2 cups worth
1 can black beans- drained and rinsed
1 green pepper diced
small handful oregano - torn into small pieces
handful chives - cut into a dice
1/3 cup black olives pitted and roughly chopped
1/2 hot pepper of your choosing diced

for serving
flour or corn torillas
large lettuce or collard leafs
guacamole

assembly:
prepare all veggies and toss in a large bowl with herbs, black beans & olives
fill tortillas or leafs with desired amount of filling, top with guacamole

enjoy!

  1. Sounds perfect to me! I would be all over these. I'm jealous of your summer bounty, because here there's been a distinct shortage of fresh veggies and fruit. And your photos are gorgeous, as always. I'm sorry it's been so long - life is really hectic here, but I'm still reading! :)

  2. Yum! So many delicious veggies. I'm heading out to a garden tonight to pick a ton of veggies. Cannot wait to be inspired by the local produce and see what I come up with. Definitely going to make these tacos with generous amount of guacamole. Mmmm! :) Love the photos! Great colours!

  3. i'm going crazy over the delicious homegrown tomatoes my neighbor has been growing. and i love the addition of kohlrabi in these tacos! i'm definitely inspired to go home and make tacos tonight..with olives for a salty bite!

    1. Isn't kohlrabi amazing - it is one of those veggies I probabaly wouldn't have found out about if it wasn't for my CSA, the purple ones are so pretty too! Olives are an absolute must for Justin and I...now if only I can get over my irrational fear of making homemade tortillas :)

  4. Great idea for using up lots of veggies! I love that they can be made without having to cook any of the ingredients - can't get any fresher than that! Kohlrabi is one of my favourite veggies to eat raw, but I can never think of ways to use it in meals so I tend to just snack on it.

  5. Ha--I can definitely relate to having eyes bigger than your stomach at the farmer's market! These tacos are a perfect way to cram in all those different summer vegetables. :)

    1. I have always had that problem of my eyes being bigger than my stomach (notably sweets when I was younger) at least this time around it is all in the name of fresh veggies!

  6. that is one awesomely fresh taco! i love cramming all sorts of veggies into one dish. i usually control myself, but hubbs easily gets all googly eyed and picks up loads of random veggies some days:) an then i have to figure out what to do with them.

    1. ahahaha googly eyed over vegs - love it! I serioulsy can't help ,y self when it comes to local heirloom tomatoes (the funkier the better), freshly baked breads on display and any local fruit!

    This is a simply beautiful meal! I just had fresh corn on the cob for the first time this summer a few days ago and I was in heaven! I love how you left the veggies nice and simple so the produce could shine. Since summer produce is so beautiful on it's own, there's no real need to fancy it up :)

  9. That's my bad habit this time of year too! I end up stuffing myself with produce at every meal just so it wont go bad before I get to it. I can't help it, everything is so beautiful :) LOVE these tacos(especially the kholrabi - aren't those delicious?)

    1. Seriously, its veggie overload at our house at everymeal - I can't help myslef, we have such a short growing season that I will take it when I can get it - next on this list this year is dilly beans!
