Burgers! Need I say more?

For us, burgers are a must during the summer months - the first BBQ of the season, 4th of July and of course it is always one of our main courses at least one night while camping in the great outdoors.

I had never had a field roast burger until recently - they are quick, easy and delish!

Regardless of the time of year, Justin and I love a good veggie burger. They are quick, easy and can be loaded with tons veggie goodness. 

When it comes to veggie burgers the possibilities are truly endless - homemade veggie burgers typically freeze well making it an awesome mid week go to when you don't have time to "cook". Make a batch over the weekend and freeze the rest to enjoy throughout the month.

Iv'e mentioned a few times my love for savory pumpkin dishes and this one totally fits the bill in both savory + pumpkin departments.

Veggie burger + falafel = a party in my mouth. Kid you not, this is one of the best veggie burgers I have made to date. Crunchy on the outside and just right on the inside (aka not dry) and holds together incredibly well without the need for any fillers such as rice, oats or bread crumbs. This is a straight bean and veggie burger with flavors of falafel and the middle east- I can't say enough about how good this veggie burger is.

I am willing to bet these would hold up well on the grill but have yet to experiment on an open grate grill. only a tabletop outside grill griddle and they cooked up perfectly.

how do you define a classic veggie burger?

for me, it is one topped with lettuce, tomato and ketchup

one that has a bit of a bite; a mouthful of flavor & goodness. 

a burger that when you take a bite you can't help but have ketchup on your chin.

life has been crazy busy lately. these are days when all i want to do is crash on the couch and not think about dinner, dishes or chores. when life gets hectic i run straight to the freezer hoping to find some semblance of a healthy dinner - typically you will find carefully tucked away leftovers or stock piles of pesto in my freezer.

this past week i was lucky - i could say that i was totally planning ahead by whipping up a batch of these tasty veggie burgers for the upcoming week. but, the reality was it was a burger experiment that just happened to taste fantastic and freeze well. this is also a burger that Justin wouldn't touch with a 10 foot pole - pay no attention to him, he is weird. so that left me with 4 burgers all to myself - which ended up being a quick and east lunch/dinner for me a few days last week.
