the farm stand is an addiction- i could have worse addictions i suppose
i went to picnic rock to pick up my first CSA of the year (yay!) practically shouting out at me from the farm stand sign was "LOCAL CHERRIES" - i was so excited i am pretty sure i almost took out a family pulling into picnic rock
i am a sucker for anything local, super cute, red, sweet & tasty
i also left with a locally made Belgian chocolate cheesecake for justin- but that is a whole other story
these beauties were seducing me the moment i walked in
bright red & perfect in every way
i was smitten- the decision was already made before i even walked in
they were coming home with me

i love the crisp topping- i am one of those that picks the topping off of crisps leaving the fruit underneath stark naked for all to see
in order to make the crisp a little more healthy i used organic spelt flour in place of white, multi grain rolled oats, brown sugar for sweetness & pecans for crunch
the cherry pitter gifted to me by my sister has proven most useful this season - one of the best gifts ever!
strawberries and cherries are layered in a baking dish sprinkled with topping

this particular crisp can be made on the grill or in an oven
the crisp cooks up a bit faster on the grill the fruit creates a caramelized goodness that you can't get in the oven
if you have a cast iron skillet USE IT - see below as to what happens when you get distracted by pretty flowers and such
check on the crisp about every 5 minutes and rotate the pan - cooking time totals about 15 minutes
oven - about 30 minutes
any berry would work well in this crisp - blueberries & strawberries, raspberries & cherries
not a fan of pecans- swap em' out for almonds or walnuts
i totally would've served this up with ice cream or whipped cream- but didn't have any on hand
try a spiked version with bourbon - mmmm that actually sounds pretty good
so for your next BBQ or VBQ whip up some good ol' fashion crisp
cherry berry crisp
serves 6
you will need:
filling:
- 3 cups pitted cherries
- 1 cup halved strawberries
topping:
- 1/4 cup spelt flour
- 1/4 cup brown sugar
- 1/2 multi grain rolled oats or regular oats
- 1/3 cup cold butter
- 1/3 cup pecans
- pinch kosher salt
assembly:
- place cherries & berries in a oven proof dish or cast iron skillet (pie size works well)
- in a separate bowl combine all ingredients except butter- stir to combine
- add butter and work it into the mixture with your fingers or pastry cutter until clumps form
- sprinkle onto filling
- bake on a grill heated to 400* for about 15 minutes checking and turning every 5 minutes
- if cooking in oven- preheat oven to 350* and bake for 30 minutes
