the very first thing we do after picking me up from the airport is to shop at trader joes
i love everything about that store
this is where she introduced me to sea salted brownie bites - can you say amazing!
of course, that is where the inspiration for this recipe came from - you can thank my sister
after one bite you will want to marry her for inspiring this recipe
chocolate chunks and cocoa powder are both used to create a super chocolaty brownie
brownies are much more fun baked as bites - of course you could bake them in a normal square pan,
but what is the fun it that?

perfect little bites for your almost perfect little world
Sea Salted Oatmeal Stout Brownie Bites
makes 36 bites
you will need:
- 2 cups all purpose flour
- 1/3 cup cocoa powder
- 1/2 tsp salt
- 5 tbsp butter
- 1/2 cup chocolate chunks
- 12oz Organic Oatmeal Stout or other dark beer
- 2 tbsp ground flax + 6 tbsp warm water
- 1 cup sugar
- 1 tsp vanilla
- sea salt for sprinkling
assembly:
- preheat oven to 350* - grease a mini muffin tin (24 count)
- in a medium bowl, combine flour, cocoa & salt- set aside
- over medium heat in a small sauce pan melt chocolate and butter - cool slightly
- in a small bowl mix flax and water, whisking until slightly thickened
- add flax egg , vanilla and sugar to the slightly cooled chocolate mixture
- add the beer & chocolate flax mixture to the dry ingredients - stirring until well combined
- with a tablespoon fill each mini muffin slot with batter - sprinkle with sea salt of choice
- bake in preheated oven for 8-10 minutes
- cool on a wire rack
- repeat until muffin batter is gone
- sprinkle with additional sea salt if desired
