avocados and i have been bff's lately, i cannot get enough of her
she tops my burgers, sandwiches , is even eaten straight up by the spoonful or slice
however, my little addiction, the ultimate way to enjoy avocados
at least in my opinion - is via almost raw tacos
fresh, filling & healthy
tacos that won't leave you wanting to unbutton your jeans
but will leave you wanting just one more bite
these simple ingredients pack a powerful punch of flavor

sweet mini peppers, heirloom cherry tomatoes, avocado, lime juice, cumin and salt
that's all- see simple
i bet you have all the ingredients at home to make these right this very minute
all the ingredients are chopped, sliced and diced
then mixed in a pretty bowl with lime juice, cumin and salt
this is really good all on its own
the tacos however are my favorite way to enjoy this mix

back to the tacos; you could totally make these raw by using a collard green or butter lettuce
as the "taco shell"
i opted to use food for life sprouted tortillas; they are organic and heated at only 250*
they are so super good for you & tasty
for additional added goodness i like to top my almost raw tacos with sprouts

the cumin is perfect for me, i love its smoky taste

Almost Raw Lime Cumin Avocado Tacos
makes 4 tacos ~ easily doubled
you will need:
1 ripe avocado, diced
2 mini peppers seeded, cut in half the sliced into half moons
2 tsp cumin
1/2 tsp salt
juice of 1 lime
1 cup cherry tomatoes - halved or quartered
1 cup sprouts
4 Ezekiel food for life sprouted tortillas
assembly:
in a small bowl combine diced avocado, sliced mini peppers, cumin, salt, lime & tomatoes
stir to combine, set aside to "marinate"
lay out 4 tortillas - evenly divide the "taco" filling between each tortilla
top with a handful of sprouts
enjoy!

Wow...your tacos look so tasty. Love how the mixture of the avocado, sprouts and tomatoes bring bright colors. I am also an avocado fan...they are so delicious and filled with amazing benefits.

DeleteI found your site looking for a chipotle sweet potato soup recipe..so thanks for that. I have made raw taco meat by soaking 2 cups walnuts for an hour or so in water then rinse & drain. Toss them in a food processor with 2 cloves of garlic 1/2 tsp each of paprika, cumin and sea salt. Pulse in the processor until it is the consistency you want. Pretty tasty. You can obviously adjust the seasonings to your liking add some cayenne if you like it spicy etc.
