cacao nib coconut granola
making granola is one of the easiest and tastiest things i love to make.
there are a million ways to make your own unique granola - i love adding different textures to my granola. once in a while all those little odds and ends you have sitting in your pantry by way of nuts, dried fruits and sweeteners typically gets made into a big batch of delicous granola that lasts a couple of weeks.

gluten free oats are tossed with unsweetened coconut flakes, pistachios,  cacao nibs & melted coconut oil.

coriander, cinnamon, a pinch of salt and agave are added to the mix.

then baked for a short time

i really loved the combination of pistachios and coconut - so yum.

the cacao nibs add a punch of super food power

stored in an airtight container, this granola will keep for 2-3 weeks.

i personally like my granola served straight up with a shot of almond milk

or eaten staight outta the container by the handful

however you like to enjoy your granola, you will be sure to enjoy this version with
hints of cinnamon and coriander.
packaged in a little mason jar, granola makes a nice little homemade "thank you", "i like you" or "you simply are the BEST" gifts - they take no time at all to whip up.

Cacao Nib Coconut Granola
makes 8 servings

pre heat oven to 325*
you will need:
1 cup gluten free oats
1/4 cup each:
unsweetened coconut flakes
pistachios
cacao nibs
1/4 tsp salt
1/4 tsp coriander
1/2 tsp cinnamon
1 tbsp coconut oil
2 tbsp agave

assembly:
in a medium bowl combine oats through cinnamon - set aside

in a medium sauce pan melt coconut oil and agave - turn off heat.
add the oat mixture to the sauce pan and stir until all of the oat mixture is well coated witih the coconut oil and agave.

evenly spread miixture on a rimmed baking sheet  - bake in pre heated oven for 10 minutes - then toss mixture and bake for an additional 5 minutes

remove from oven. with the back of a spatula press down on granola, this will help form the big chunky pieces of granola.

allow to completely cool in the pan. once fully cooled, store in an airtighht container for u

  3. Ooooooooohhh--cacao nibs are such a great addition! I am going to have throw some in during my weekly batch of granola-making. I like the idea of my milk turning into a stream of chocolate so at the end I get the honor of slurping it all in as a reward for eating so well :)

  4. Can you believe it's been one year since I've made my own granola?! What happened to me!! This looks super yummy, and I love the addition of pistachios! Will have to do that next time. :)

    1. Gosh Willow what is wrong you - you are totally lacking in the granola & hummus making area, gee maybe you are just too busy whipping up absolutely amazing recipes and taking gorgeous photos of them?

      I do reccomend the already shelled pistachios, that is unless you are like me and kind of dig the mindless repetition of shelling them - it is kind of soothing...

  5. Another great granola recipe - I've never tried one with pistachios! Also, I didn't realize there were different kinds of cacao nibs until recently...my dad bought some that looked like the ones in your picture and I noticed they were called sweet cacao nibs. They tasted much better than the ones I have, which are unsweetened and more crunchy. But I think either kind would work well in a granola!

  10. Coriander- that's so unique! And what a great idea!

    This granola looks so freaking fantastic- I wish I has some sweet cacao nibs so I could whip this up! I bet this would make a lovely addition on top of a banana smoothie or with some homemade almond milk. Damn girl my mouth is watering.

    Also, I think I'm a little too white to be saying "Damn girl" but let's look past that shall we ;)

  12. Ooh, I really like this combo! I just usually make it with almonds/pecans, honey, and raisins so this will be awesome for a change. And my dad bought some unshelled pistachios the other day at Costco!

  14. i am loving the dark mood of the pictures.. its tough to take pretty pictures of dark stuff, without the whites overpowering it! these have perfect depth!
    and coriander in the granola.. did u add seeds or powder. the seeds would give a fun burst of flavor with the pistachios ad cacao nibs. i am loving loving this granola!

    1. See this is why I need you over in NH Richa - I have coriander seeds sitting in my pantry and it never dawned on me to use the whole seed, I ended up using powdered coriander- you are so right the seeds would have added so much dimension!

  19. I love you!!! I just bought 2 large bags of cacoa nibs from Amazon.com and had no idea what to do with them. I have all but one of these ingredients in my pantry! And its another use for the vat of coconut oil I bought from Amazon.com too! WooHoo!!!! I know what I am doing this weekend!

  21. Yum! I have actually had a few granola failures- mainly I've wanted those big clusters of granola and haven't gotten 'em. But maybe being more adventurous with the ingredients like this is even better!
