are any of you just curious? i am all the time.
i am not planning on having my own family any time soon, however i am always curious how other people and cultures choose to raise their children. my curiosity was sparked over at leslie grahams blog while reading one of her "what I'm reading posts"- Bringing Up Bebe. it sounded interesting and it is, it is written from an ex patriots point of view and narrows in on the differences of how the french raise their children from the start than many american parents do. well anyway, in this book they go on to say how the french begin baking with their children from a very young age. it is meant to teach them patience, independence and a life skill. the very first recipe many french children learn to make is the yoghurt'cake. so here it is, my vegan version of the yoghurt cake.

the recipe in the book goes on to tell you that the base of the cake is very standard, it is up to you if you wold like to add in any berries or other goodies to the final cake.
i opted for a combination of wild blueberries, nectarines & pistachios.

i am head over heels in love with the colors of this cake, it is just so pretty!
the cake is baked in a 9" cake pan, I opted to bake mine in a spring form pan - it was so much easier to remove the cake for display using the spring form pan.

the cake comes together very quickly and with minimal effort- keep in mind very young french children make this cake with little or no assistance from their parents other than popping it into the oven.

in the book, i found it interesting that french children quickly adapt to schedules - and almost all children are on the same "unspoken" schedule - a very similar schedule to their parents.
this cake is normally baked on the weekends and served at 4pm, which is the typical snack time in france.

we enjoyed this cake for both a snack and breakfast the next morning. the cake is subtly sweet and has the perfect balance of sweet and salty from the added fruit and pistachios.

serve with freshly whipped vegan cream or vegan ice cream.
in the book they recommend creme fraiche - so by all means if you have it on hand try some with this cake.

one of the simplest cakes and tastiest cakes i have made to date. i plan on making this with my nephews when they come up for a visit in october - i hope they will have as much fun as i did making it.

Blueberry Nectarine Pistachio "yoghurt's" Cake
serves 12

you will need:
2 - 6oz containers soy yoghurt's
2 flax eggs
(2 tbsp ground flax + 6 tbsp warm water blended)
1 - 2 containers sugar - i used (1)
1 tsp vanilla
just under 1 container vegetable oil : substitute mashed banana
1 container almond milk
4 containers flour
1 1/2 tsp baking powder
2 containers blueberries
1 nectarine, pitted & sliced
1/2 container shelled pistachios, roughly chopped

assembly:
pre heat oven to 375*

in a large bowl blend wet ingredients
in a medium bowl combine dry ingredients
add dry ingredients to wet and stir until just moistened
pour batter into a 9" cake pan or spring form pan greased with vegetable oil
sprinkle berries, nectarines & pistachios over the top
bake 35 minutes - test the cake for doneness, if not done continue to back for an additional 5 minutes

once done, remove from oven and allow to cook prior to serving

serve with freshly whipped vegan cream, vegan ice cream or creme fraiche

enjoy!

  1. you always have delicious cake recipes !! This looks delicious. I love the idea of showing kids how to cook and bake at a very young age. My mom showed me little easy recipes when I was a kid. It was like magic for me. Ingredients that became something so delicious at the end!

  2. that book sounds fascinating! i'm the same way, even though i don't have children, i am very interested in the way other cultures raise their children. it sounds like the french have a great way of raising their kids. and the yogurt cake looks delicious!

    1. The book is so fascinating and the French really do seem to have a really great parenting style that is really just the "norm" - I thought it was so much fun that most children in france learn this recipe first - it really is so easy to make!

  3. I've heard of that book before and I've always been intrigues by it! While by no means am I looking to start a family soon (kinda need a man first ;)) I would be intrigued to read about how the French raise their children. I love all facets of French culture, so why not this one?

    Anyways, to this cake- looks just delicious Heather. Perfect for an afternoon tea!

  4. i am always curious! it's so crazy to think that when my parents were my age, they were pregnant with my oldest brother! and W.O.W! that cake looks absolutely amazing! the toppings looks so rustic and gourmet and just beautiful!! your photos, as always, are stunning:)

    1. I know it! My parents were very young when they had me and my Sister and every year I get a little older I think oh my gosh my Mom had a 12 year old at the age I am now- so weird! But, that is all she ever knew :)

  5. I think its a great idea to cook with the kids. I didnt start cooking till i was 19 and thats because i was interested in eating different foods. My sister didnt start cooking till she got married:) We dint have ovens, so the cakes were baked on stove top, which also happened after i was 19. I did however make elaborate fusion meals then, which my mom loved, and dad frowned upon.:) he was a stickler for a set of indian dishes and didnt like to experiment. Now ofcourse is a different matter. now he eats everything i make:)

  7. What a great-looking cake! What do you mean by containers? Is it equivalent to cups? I not quite sure how much to use of the sugar, milk, oil, yogurt, and berries all being measured by "containers."

    1. Thank you! The container refers to utilizng the yogurt container for your measurements - so no cups just measure everything out with your empty yogurt container :)

  9. I have the same question...What do you mean by "container" when referring to the sugar, vegetable oil, almond milk, flour, blueberries, and pistachios? For these ingredients - does container refer to "cups"?

      The Container refers to the empty yogurt container - that is what you use to measure all the ingredients out, sorry for not explaining that :)

  10. I am totally loving the colors on this cake! And I also love that it could be easily adapted to whatever fruits you may have around...definitely a keeper! No kids for me for a long while, but that book does sounds interesting. I've been hearing so many things about it, I just may have to check it out sometime.

    1. The Colors are pretty aren't they! I LOVE pistachios, it is probably my favorite nut- and I love the green color once chopped :)

      Totally healthy for breakfast - especially if you only go with 1 cup of sugar/sweetener :)

  12. You always come up with such creative combinations of ingredients in your baked goods that make so much sense together! I like how you can just use the empty containers for measuring - that would definitely make it easier for a kid to bake! My mom would sometimes get us to "help" her bake things, but I didn't really start on my own until I was in university!

  13. I'm not French, but grew up in South Africa, and there too kids grow up baking (and eating good food with their families). My own two children have been cooking and baking with me since they were toddlers. It's amazing how much children can actually do once you give them the space to try. My 10-year old son can make dinner entrees, bake cakes, and even make pastry all by himself. Both he and my 7-year old daughter use regular kitchen knives (no hacking at food with dinner knives!), can deal with hot pans, and can measure ingredients, crack eggs, and do most other basic cooking tasks. It's a lovely relaxing activity to do together.

    They do go to a French school, and we first encountered the basic yogurt cake there - one of the teachers had the kids bake it for each class birthday, and the birthday child got to choose a "special ingredient" to add to the plain cake. I love the look of your "special ingredients"!
