maple peanut butter apple tarts

SMBP // Maple Peanut Butter Apple Tarts
Apple Picking is forever a battle in our house- to simply put it Justin is not a fan of Apple Picking and I totally am, however he was totally into these tarts which is a rarity as he is not big on apples.

Lucky for me, my Girlfriend has a weird boyfriend that doesn't like apple pie or any cooked apples matter of fact, but likes apple picking so she had a ton of apples for the taking. I was totally all over her offer when she told me she had some to spare!

maple peanut butter chocolate tart

maple peanut butter chocolate tart
I am a sucker for a pretty dessert - give me a mug of steaming hot Chai and pretty plated dessert and I'm in 7th heaven.  Beautiful desserts don't need to take a lot of time to create, sometimes the simplest of desserts are the most pleasing to the eye. Take this tart for example - minimal ingredients, no refined sugar, a  helping of healthier than average ingredients plus pretty plates and you have yourself a super awesome dessert that plates up even prettier. I love desserts that look like a lot of effort but can be made in no time at all.

This here is one of those desserts -  plus this is totally a Mother's Day worthy dessert if I ever did see one

tomato tart

tomato tart
oh my, is it nearing the end of summer already? it truly feels like yesterday that i was writing my first post about how excited i was to venture to the first farmers market of the season.
now we are knee deep in bushels of ripening eggplant & tomatoes, abundant basil and the last of our "hot" weather crops are making the final push of producing before the cooler weather moves in.
this time of year , the transition from summer to fall has me craving warm fall soups, pies and tarts.
with summer still forging on and fall knocking at the door i decided to combine the two into what i think is the perfect dish combining the best of summer and a little hint of fall.

spring greens petite vegan quiche

spring greens petite vegan quiche
moms. they're the best.
they deserve breakfast in bed, freshly picked flowers and lots of love every day of the year.
one day out of the year they deserve an extra special breakfast, flowers they can plant that reminds them of each mothers day gone by, a day that we get to tell them how much we love them the remaining 364 days of the year.

my mom, there is no one remotely like her - she is amazing, one of  kind.
and I was lucky enough to spend mother's day morning eating mini quiche and chatting over cups of tea with her and Justin - although we did most of the chatting, Justin sat quietly by looking cute.
