routine - sometimes i get stuck in a routine for month's.
change can be hard, going with the flow is something that i still work on becoming better at.
once i do switch things up i realize that its not so bad; it's actually really refreshing.
starting with something small helps to get the momentum going. for me, it was changing up my breakfast habits. predictability has its positives, but going with the flow and spur of moment "creations" or "events" are good for the soul too.
in place of my "predictable" sprouted English muffin with peanut butter - inspired by the fresh local fruits that are starting to show there pretty little faces, i created my version of the breakfast parfait. so versatile, the possibilities & combinations are really, truly endless.
local strawberries and blueberries have been my berries of choice - soon enough raspberries and cherries will be in season, along with local peaches. i prefer to sweeten my own soygurt, then sprinkle with a healthy dose of cinnamon - i am not a fan of overly sweetened soygurt, the agave lends just enough sweetness. the muesli adds a layer of crunch and just plain goodness. i also really enjoy layering Love Grown Foods Oat Clusters and Love, Cocoa Goodness - this has got to be the best granola ever, thanks gabby for the intro!
this granola is simple enough to quickly pack up to go - take it to work or on the road with you. make sure you store the granola or muesli on its own and assemble just before enjoying.

Some facts about me:
- At one point around the age of 7 or 8 I wanted to be a Fashion Designer, I even created a portfolio of hand drawn "designs" and attempted to sew barbie clothes
- I constantly analyze how to make things "even better", my home, food, garden; everything - I am not sure if this is a good thing or a bad thing, its not that I am not happy with what I have I just like to make things better than they already are - taking things to the next level to be the best they can be.
- I so badly want to invest in a second property, redesign and flip or move into the home and rent our current home out - Justin tells me we need to first focus on our current home :) I am even trying to compromise by purchasing a little cabin in the middle of no where on the lake...and I think i found the perfect one!
- About 3 years ago I created a book club and it is still going strong - I have always loved reading. On the last day of 7th grade I remember I couldn't take my eyes off my Dad's Stephen King book Thinner...I'm not sure if Stephen King books were age appropriate in 7th grade- that and VC Andrews! Anyone else addicted to VC Andrews in Middle & High School?

Breakfast Parfait
makes 2 parfaits
you will need:
1 cup yogurt yogurt
2 tsp agave
1 tsp cinnamon
1 cup berries
1/2 cup muesli or granola
2 tbsp cacao nibs
assembly:
place a 1/2 cup of yogurt at the bottom of 2 bowls or cups
drizzle 1 tsp of agave per parfait & sprinkle with cinnamon
layer 1/2 cup of berries per parfait with a 1/4 cup of muesli or granola
sprinkle with cacao nibs
enjoy!
This was my go to breakfast while traveling to Sweden and Denmark - super easy, delicious, and most importantly, quick! I was very happy to see all of the necessary ingredients at our hotels/B&Bs.
ReplyDeleteHi Kier! I love thise type of breakfast to travel with, anytime I plan on overnight trip I always pack some homemade granola - most Inns / hotels have fresh fruit and either soy milk or soygurt to make these - great minds think alike!

ReplyDeleteI go through breakfast cycles - I'll eat porridge for a few months, cereal for a few months, yogurt and fruit for a few months.. then in the summer I usually just grab a raw fruit/nut bar and an apple.. and I'm out the door.

DeleteIn the winter on weekends I am a cream of wheat fanatic and in the summer granola and almond milk with fresh fruit...I am really tring hard to vary my work day breakfast or else i am going to turn into a jar of PB!
you know, i don't think i've ever actually had a parfait. it's so weird..because whenever someone posts a parfait recipe, they always appeal to me. but it isn't until just now that i realized that i NEED to eat one asap. thanks for bringing me to this realization, lady!

ReplyDeleteI did the same thing! I drew up designs and tried to make them up for my Barbies. *hehe* I was horrible at sewing though. I had this tendency to quit something when I was not automatically good at it. *HAH* Therefore, I never became a fashion designer. *hehe*
I also am always trying to do things better. I think it's good to always strive to do better and be better, but sometimes it can be rough as well. Always having such high expectations of myself can get me down sometimes and deter me. Do you find the same?

I can be very critical of myself - and I do tend to have high expectations of myself which I end up putting a ton of pressure on myself which isn't a good thing....I am working on that, being a less critical :)....are you a cancer by chance?

ReplyDeletei usually eat parfaits in between meals. its habit from way back when we would eat a whole lotta fresh fruit between meals. Our breakfasts circle between random variations of pancakes, french toasts, light sandwiches, chickpea crepes, Upmas( savory veggies, nuts and whole grain preps). Every other week hubbs will crib about eating the same thing(can you believe it pfft, after all the crazy french toasty things i make pftt pfftt) so i have to come up with something new. :)

What a beautiful breakfast parfait! I tend to eat oatmeal with peanut butter and banana every day... but that gets rather boring. I think a treat like this could definitely liven up my mornings!

DeleteThis is pretty close to what I have for breakfast most days - yogurt topped with granola and whatever fruit I have on hand (most often bananas!). I've been eating that Love Grown granola too - I love the ones that come with lots of coconut flakes!

ReplyDeleteThese parfaits sound awesome! I don't really have a breafast routine... if there's fresh fruit in the house, it's usually that, sometimes cut up over cereal. Or just cereal. Or oatmeal, if I'm chilly. Or leftovers from the night before. I'm usually too groggy to put much work into anything before 8am. :P
