i have a super easy, uncomplicated salad for you today.
uncomplicated is good sometimes.
truth. sometimes i make things more complicated than they need to be - enter this salad, he quickly uncomplicated things for me.

the best part about this salad, the radishes & greens were picked straight out of the garden - it doesn't get any more farm to table than that, or rather back yard garden to table.
for me, one of the best feeling is being able to walk out into my garden and gather fresh veggies grown from seed for that day's lunch or dinner.

have you ever roasted radishes? no, well let me tell you it is amazing!
the roasted radishes are creamy with just a hint of sweetness.

i used 2 different radishes - Patricia breakfast radish and Easter egg radish.
feel free to use whatever radish variety you can find at the farmers market.

sunflower sprouts, arugula and a handful of herbs are the greens used in the salad. oregano, winter savory, tarragon and basil are just a few of the herbs growing in my garden and were used in the mix.

Patricia radishes are a first for me this year. i was amazed by the flavor of these beauties.
when sliced raw, drizzled with good olive oil the sprinkled with sea salt & cracked pepper you have yourself a nice little afternoon or morning treat.

not quite summer but more of a late spring salad, perfect for lunch after a trip to the Saturday morning farmers market.

the salad is best enjoyed drizzled with the most basic vinaigrette - lemon, olive oil with a pinch of salt and pepper was my choice - if you want to dress it up a bit add a bunch of fresh herbs to the vinaigrette.

hulled sunflower seeds add a welcome crunch to the salad.

with fathers day right around the corner, what better addition to the brunch table than this?
breakfast, not brunch- then thinly slice a hand full of radishes and drizzle with olive oil, salt & pepper or roast them as a simple side dish or drop them in an tofu omelet or scramble

slow down, take the time to enjoy summer and all her gifts.

roasted garden radish salad
serves 2

you will need:
1 tsp sea salt
cracked pepper
2 tsp olive oil
12 radishes, quartered or halved
4 cups arugula, herbs & sunflower sprouts
basic herb vinaigrette
sunflower seeds


assembly:
preheat oven to 350*
(also can be roasted in a foil packet on the grill)

trim radishes, quarter or halve depending on their size
on a rimmed baking sheet toss the radishes with olive oil, salt and pepper
roast for 10-15 minutes, until tender and slightly golden
remove from oven toss with greens & sprinkle with sunflower seeds; dress with vinaigrette

enjoy!

    1. You absolutely do need to roast up some radishes!

      I have always grown up with a Garden, my Dad still has a tremendous Garden and a Flower Garden (really the entire property) is like a fairytale flower land, it is absolutely amazing! I remember when I moved nto my first apartment I claimed a little piece of the backyard and did up my very own garden - I definitely was born with a love of all things green :)

  4. Hmm I didn't realize there were so many kind of radishes with such cool names! It's good advice to remember to keep things simple every once in a while, especially when it comes to summer produce. One of my favourite things to eat this time of year is a piece of toasted bread with butter (Earth Balance coconut spread is my fave) and topped with sliced radishes sprinkled with lots of salt and pepper. I never get sick of it!

    1. Neither did I! I LOVE the Patricia Radish - they do not have that bite most radishes have, they are so mellow and delish :)

      I have been meaning to try the coconut spread, I am gald to hear that you like it- I an definitely going to have to try it.

  6. i love love the pictures.. and the radish slices look super cute!
    my mom really loved the red radishes when she visited last year. Each grocery trip had a bunch. i am yet to make friends with them. maybe i should roast some!

    1. I find the smaller the radish the less heat and spice - I love the patricia radish, it is almnost creamy and a bit more mellow - I am so glad I grew them this year!

    1. It is the best thing, I can spend hours up in my garden - literally hours, talking and spending time withmy plants, they even speak spanish....okay that just made me sound like a complete crazy person - truth. I do speak spanish to my plant, it makes them more well rounded :)

  12. I love radishes! I pan fry them with green beans and spanish onions. One of my favorite side dishes of all time! Having them in that salad sounds delish!

  13. Great photos! I have never tried roasting radishes, but it's a great idea! I don't use them very often because some people (*cough* Boyfriend *cough*) don't like the bite they have... but roasting might be the perfect solution!

    I also make things very complicated sometimes (read: most of the time). Salads are always great fall back, and perfect for the warmer weather!

    1. Hahha **cough** my boyfrined *cough, cough* can't stand them either....so more for me! Roasting them totally takes away the bite and patricia radishes raw are more mellow overall.

My fall back uncomplicated (and comfort) food is peanut butter banana sandwiches. Apparently, I just revert back to my childhood, but they somehow always manage to clear my head...

    1. It is the best thing being able to harvest veggies straight from the backyard...I sometimes day dream about having my own farm....one of the best feelings for me is the smell of earth and hands in the soil!
