sometimes i just want toast - prettied up toasts, plain toast, pb & jelly toasts.
after making the rosemary & olive peasant bread i was totally craving a big ol slice toasted with a whole lotta goodness piled high. almost like an open faced sandwich that thinks it's classy.
a classy little rustic pumpkin toast is what it turned out to be.
a few of these beauties served along side beluga lentils & butternut squash and
you could say i was one happy girl
these are super quick and easy and i bet you have most of the ingredients or a variation on hand.
i love all the different textures that are piled high on each little toast - sweet & savory, just the way i like it

the tofu mix may seem a little odd but trust me on this - it tastes good!
the hint of maple with the pumpkin are just meant to be together add in a little spice from the arugula, sweetness of the cranberries and crunch from the pepitas - your taste buds will be high fiving each other!

Rustic Pumpkin Toasts
makes 8 toasts
you will need:
8 slices rosemary olive peasant bread - lightly toasted
3/4 cup pumpkin puree (not pumpkin pie filling)
1 cup mashed firm tofu
1 tbsp pure maple syrup
1/2 tsp fresh thyme
pinch celtic salt
1 cup mashed firm tofu

handful arugula
2 tbsp pepitas
2 tbsp dried cranberries
assembly:
lightly toast your bread under the broiler on low - about 3-5 minutes
in a medium bowl mix tofu, maple syrup, thyme and salt
to assemble the toasts - spread a layer of pumpkin, then a layer of seasoned tofu, top with a few arugula leaves and sprinkle with cranberries & pepitas.
continue with the remaining 7 toasts.
