chocolate chia cookies

cookies, can they be healthy? i think so.
i love sweets, it is a weakness i embrace. it simply means to

a. work by butt off at the gym
b. find alternative forms of sweetness that isn't all that bad for you

on Friday i had a few extra hours in the morning that I'd thought i would put to good use.
cookies were on the agenda and i was on a mission to make a slightly healthier cookie.

 whole wheat pastry flour, agave, chia seeds and soy yogurt are the healthy players in this recipe. they are mixed into a batter with a few other essential ingredients then dropped on a parchment lined baking sheet by the tablespoon.

the cookies bake up to resemble more of a cake like cookie - this i attribute to the fact that you won't find any vegan butter or oil in this recipe. for a more traditional type crispy cookie i may try adding a bit of coconut oil to the mix in the place of the cold water.

Justin knew that morning I was making cookies - he , however expected to find traditional crispy , chewy cookies  waiting for him when he came home at lunch time.

the good news - he did love this healthier version. it made him feel even better after eating 5 of the cookies that they are healthier than your typical cookie (lets get real though, he still would have eaten 5 cookies healthy or not)

double dutch dark cocoa and vegan white chocolate chips make your taste buds dance after each bite

served with a nice cold glass of almond milk these cookies would be a perfect afternoon snack for your kids- big and small.

a cookie that you can feel good about making and going back for seconds.

make a batch today for the ones you love or for the office - but don't give away your secret that these are healthy until after the plate of cookies has gone empty.
Chocolate Chia Cookies
makes 16 cookies

you will need:
1 cup all purpose flour
1 cup whole wheat pastry flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup double dutch dark cocoa
1/2 cup plain soy yogurt
1 tbsp chia seeds
1 tsp pure vanilla extract
2/3 cup agave
1/4 cup cold water
1/3 cup walnuts
1/2 cup vegan white chocolate chips

assembly:
preheat oven to 350*
in a medium bowl sift AP flour through dark cocoa - set aside

in a small bowl whisk soy yogurt through cold water

add wet to dry and stir well. mix in walnuts and vegan white chocolate chips

on a parchment lined baking sheet drop by the round tablespoon

bake for 12 - 14 minutes, when the tops are lightly tapped they spring back

remove from oven and allow to cool with the cookies still on the pan over a cooling rack for 3 minutes - transfer cookies from the pan to cooking rack.

repeat until all cookies are baked - or bake 2 sheets at a time rotating pans half way through baking.

  3. I know a lot of people don't like cakey cookies, but I definitely do! That looks like the type of batter you could just plop in a bowl and eat as a cookie dough dip!

    2. Fruit would be a good dipper for chocolate since its so healthy! I would want to say strawberries, but I guess they're not the easiest to dip...I also think graham crackers make a really good dipper for things like dessert hummus and raw cookie dough. Or you could just go all out and eat your cookie dough with more cookies!

  4. I love cake-like cookies...and I adore chocolate. I've surprisingly not tried chia seeds, but will pick them up tomorrow at the organic market. Looking forward to trying these!

    1. Did you find the vegan white chocolate chips anywhere in your area? You have been missing out on the Chia seeds, they are so good for you! (I can't help but to sing the song for the chia pet commercial everytime i pull them out of the pantry!)

  7. totally agree about eating that batter! i love soft cookies.. some days i go off on the measurements and they end up soft anyway and i call them muffin tops :D i mean it doesnt really matter what you call something that tastes so good! i am still mesmerized by that blue pattern

  13. By the way, I am making these- and your white choc truffles- tomorrow for a girls night! A friend was recently dumped so we are showering her with chocolate ;-) Think I am going to make a dark chocolate cherry version of the cookies. Can't wait!
