  8. Your dish looks great! Eggplant is one of those vegetables I love when I eat it, but for some reason I don't bring it home that often. That needs to change!

    1. I don't bring it home too often either, but that's just because I am the only one in the house thtat enjoys eggplant...just likes his Mom's deep fried eggplant parm, but that's the only way he will eat it :0
