peanut butter bundt // dark chocolate frosted + Leibster!

 
peanut butter & chocolate, is there any better combination?
everything about this cake i love- the pure peanut butter cake, dark cocoa frosting and the chopped peanuts
I'm telling you, this is a cake you will want to eat for breakfast, lunch & dinner.
a cake that is perfect for an after school snack, a potluck or your next book club get together

my book club peeps were quite lucky last week - i made them this cake. 2 days later i made another one, that is how incredibly tasty this cake is; totally worthy of baking twice in one week!

a peanut butter batter is poured in a well greased and floured bundt pan.
the greasing and flouring is super important, once cooled the cake will slide perfectly out of the pan onto your serving plate. if you skip the greasing and flouring be prepared to get creative with frosting.

a butter cream frosting is perfect for this cake - not to fancy & straight to the point.
sometimes it's nice to dress up, other times it's even nicer to wear your comfy clothes all day.
this is that type of cake, comfy & homey.


the cake is cooled in the pan for at least 30 minutes - if you move to soon to flip your cake out of the pan you could be asking for trouble in the form of cake stuck yo the bottom of your pan resulting in a topless cake and possibly a few naughty words thrown in.

the cooled cake is then frosted with a dark cocoa butter cream frosting

intensely chocolaty is how i would describe this frosting.
dutch cocoa can be substituted for the double dutch dark cocoa powder

the frosted cake is then topped with a smattering of chopped salted peanuts.
another combo i love, sweet & salty; total goodness.

a little glass of almond milk goes hand in hand with a slice of this cake.
be prepared for a peanut butter chocolate explosion after each bite of this cake, you may want to brace yourself for the incredible experience you will have with eat bite.

this certainly won the seal of approval from Justin and my book club friends.
peanut butter cakes must be popular at book club events, my friend court over at the fig tree served a version of peanut butter cake at her last book club- you should totally check it out!
Peanut Butter Bundt ~ Dark Cocoa Frosted
12 generous servings

you will need:
for the cake
1 1/4 cups spelt or whole wheat pastry flour
1 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt

3/4 cup soy yogurt
2/3 cup sugar
1 cup peanut butter
(i used peanut butter & co all natural creamy)
2 tsp pure vanilla extract
1 cup almond milk

1 tbsp vegan butter for greasing the pan
1 tbsp flour to dust the pan

for the butter cream
2 tbsp vegan butter - room temp
(i used earth balance)
1 1/2 - 2 cup confectioners sugar
2/3 cup double dutch dark cocoa
1 tsp pure vanilla extract
 2- 3 tbsp almond milk

1/3 cup chopped peanuts

assembly:
pre heat oven to 350*

to make the cake:
grease the bundt cake pan with vegan butter and dust with flour, tapping out the excess

in a large bowl sift flours through salt

in a medium bowl whisk soy yogurt through milk until well combine

add wet to dry and gently mix until all dry ingredients are moistened
evenly pour batter into the greased & floured bundt pan
bake in the pre heated oven for 30-35 minutes until a cake tester comes out clean or with a few moist crumbs

remove bundt from the oven and cool on a wire rack for at least 30 minutes

while the bundt is cooling prepare butter cream frosting
in a stand mixer, on stir speed mix vegan butter, cocoa & powdered sugar
slowly add vanilla and almond milk - increase speed to medium and beat until smooth & creamy. chop peanuts.

once the cake has cooled, turn onto serving platter. frost with butter cream and sprinkle chopped nuts on top.

  21. I found your recipe after I decided I wanted a peanut butter bundt cake for a special occasion. We were having non-vegan guests and one of my kids doesn't like chocolate, so I was also trying to find a dessert that everyone would like. The cake was moist and delicious and not too sweet. The texture was perfect. I made a chocolate ganache and poured that over 3/4 of the cake and a quick glaze over other 1/4 (for the kiddo who hates chocolate). I am sure this recipe will become a family favorite. Thanks for creating and sharing your recipe!
