one of the things i like best about summer is enjoying dinner in the backyard - grill heating up, drink in hand, pup happy, sunsetting over the lake, birds singing for their dinner and the scent of flowers enveloping you in a heady perfume that never gets old

it is no secret i love sweet potatoes - sweet potatoes are extra special . high in nutrition - A 7-ounce (1 cup) serving of sweet potatoes contains 65% of the minimum necessary daily amount of Vitamin C. Sweet potatoes are also high in calcium, folate, potassium and beta-carotene. Beta-carotene is an antioxidant which converts to Vitamin A in the body: one serving of sweet potatoes can provide you with as much as 700% of the US RDA for Vitamin A.  low glycemic index- perfect for diabetics & good for your skin- who does'nt want a glowing complexion!

but wait! this dish gets even better - sweet potatoes are peeled and cut into wedges, then sprinkled with coconut sugar, white pepper, salt and olive oil.
Coconut sugar has a high mineral content, being a rich source of potassium, magnesium, zinc, and iron. In addition to this it contains Vitamin B1, B2, B3, and B6. When compared to brown sugar, coconut sugar has 36 times the iron, four times the magnesium, and over 10 times the amount of zinc.[6]
The coconut sap, from which which coconut sugar is derived, contains 16 amino acids. The amino acid which has the highest content in coconut sap is Glutamine. {source}

the greatest thing about cooking on the grille is the easy cleanup - i love foil packets lined with parchment papper for grilling veggies and potatoes. the grill packets are popped onto the grille and grilled for 15- 20 or so minutes depending on the hotness of your grille.

when grilled the coconut sugar infuses the sweet and the white pepper lends a nice spicy contrast to the coconut sugar sweet potatoes - sweet and savory all in one bite.
the next day i tossed the left over sweet potatoes in a salad topped with a "classic veggie burger" - so .freakin. amazing.

Grilled Sweet Potatoes
serves 2-3

you will need:
1 large sweet potato, peeled, halved and cut into wedges
1 tsp coconut sugar
drizzle olive oil
1/4 tsp white pepper
1/4 tsp kosher salt
foil and parchment paper for foil packet

assembly:
make your foil packet by tearing a sheet large enough to contain sweet potatoes when folded up to create a sealed foil packet (you want to trap the heat)

line with a smaller piece of parchment paper - this helps prevent the potatoes from sticking to the foil, it is a trick that has worked well for me

place the sweet potato wedges in the center of the parchment lined foil packet. drizzle with olive oil & sprinkle with white pepper, sugar and kosher salt.

bring the 2 longer sides of the packet up to meet in the middle and fold over until a tight seal/crease is formed. the seal the two ends.

place on the grill (mine was heated to 400*) and grille for 15-20 minutes. I like to place the foil packet on less direct heat to prevent the bottom wedges from becoming over done (low heat with the other burners running hotter)

remove from grill and undo the top seal.

    I don't use coconut sugar a lot, I find it really expensive, but I absolutely love it. I ran out a little while ago and I miss it! I never tried it on sweet potatoes so I'll have to try that :)

    1. I hear you on that Gabby it is a little on the pricey side so I use it sparingly- but on the other hand had to try it, it sounded too interesting not too :)

      One of my favorite things about summer is dining al fresco and sweet potatoes :)

  6. I love sweet potato wedges! What an interesting combination of white pepper and coconut sugar on them! I love your description of eating and cooking in the backyard too - that's why I spend more time at my parents' place in the summer rather than my apartment! It makes me wish it was summer all year long...

  11. Sounds amazing! I love sweet potatoes, and all their health benefits, but didn't know how nutritionally rich coconut sugar is... will have to give that a try.
    Also, I seriously need a grill... I haven't cooked anything in weeks because it's just too hot to turn on the oven, stove, or basically anything other than the microwave. :(

    We also just grilled them but with no packet - burn kinda too quickly
    but so good. I love the packet idea but I try not to use the aluminum at all - and the parchment burns too fast.... so I don't know of any other alternatives at the moment.

    1. Thank Ella! I have also used a standard sheet pan on the grill - not directly over the flame but off to the side and it works pretty well :)

      haha Justin and I had a parchment papper disaster on the grille while attempting to cook homemade pizza- lets just say that the pizza was perfect on top but severly burnt on the bottom due to the parchment paper fire we created ;)
