different in a good way. starting up this blog has allowed me to meet so many wonderful people across the country as well as across the world.
my heart fills with happiness that i have the privilege of knowing these wonderful people, i know i have become a better person simply by reading their words of wisdom and encouragement on a daily basis. it is encouraging to know that there are still so many GOOD people in the world.
currently, there is a wonderful string of hope posts circulating within the blogging community. it has been amazing to read every one's perspective on hope. two wonderful ladies that i have gotten to know recently have asked me to join in ;Kristy from keepin' it kind & gabby from the veggie nook.
i visual these words on hope a lot like virtual hand holding, lending support and encouragement with words, a long hand holding string of posts.
but don't worry, of course there's a recipe to go along with a little hope.

hope gives us the strength and courage to continue to move forward - when all else fails in the world at least we still have hope.
for me, hope is something that can never be taken away, we all have the ability to find hope in any situation even if it appears hopeless.
my dad and i recently had a conversation about this very thing. for him, hope is the one thing above all else that keeps him going - it resides in his heart, in his being. it is the one thing he never questions. hope for my dad is very similar to ones faith.

now what you all have been waiting for right! the recipe for this amazing cobbler - let me tell you this was entirely inspired from the farmers market on Saturday. Steve from precious gardens had the most beautiful peaches i just couldn't resist. paired up with some blackberry beauties from another local farm and thyme from my garden and i was in cobbler making heaven.
i love pairing fresh herbs with fruit, it adds a whole nother dimension of flavor.
thyme was a perfect match with both the peaches and blackberries - totally made my heart sing.
there is a gluten free option which i believe is also paleo - but please don't quote me on that. i am still learning about the paleo way of life and from what i have read coconut sugar is still questionable whether it is paleo or not. tell me, have any of you been researching and testing out any paleo recipes, it is so very similar to whole foods vegan living.
incredible served warm with a scoop of vegan ice cream or coconut whipped cream - this cobbler is super easy to make and is perfect to bring along to your next potluck or BBQ, a total crowd pleaser.
blackberry thyme peach cobbler
serves 10
you will need:
2 peaches, pit removed and sliced
1 cup black berries
1 tsp fresh thyme, wood stem removed
1/2 tsp salt
1 tsp baking powder
1 cup coconut flour or all purpose flour
1/4 cup coconut oil, softened
1/2 cup + 1/4 cup coconut sugar
1/2 cup almond milk
1 cup boiling water
assembly:
pre heat oven to 350*
Whisk the flour, baking powder thyme, and salt together in a mixing bowl.
Cream 1/2 cup of coconut sugar with the softened coconut oil until light and fluffy. Mix in the flour mixture alternately with the almond milk until no large lumps remain. Pour into a 8x8 baking dish. Arrange the berries & peaches over the batter, and sprinkle with the remaining 1/4 cup of sugar. Pour the boiling water over top.
Bake in the preheated oven until the batter has firmed and the berries & peaches are soft, about 40-50 minutes.

DeleteIt didn't even cross my mind to ever use thyme in a dessert..li have only used lavender in baking and other basic spices like cinnamon, nutmeg and so on. But, thyme is so creative! This cobbler must have tasted divine!
ReplyDeleteThe thyme was amazing - for some reason (maybe because I have an over abundance of fresh herbs in the Garden) I have been loving adding herbs to my bake goods, it adds such a nuanced flavor to the overall dish :)

I think hope is such an integral part of being human... there's a psychiatrist who, during the holocaust, noted how many of the people who survived (despite the same illness, famine, etc. that others died from) were the ones who still had hope. I always think of that as a reminder that hope is real, and it's powerful. I agree with your dad, that it's very similar to faith.

I know that in Greek mythology, "hope" was a weapon or a plague released upon humanity. I feel that it is the complete opposite. Without hope, we have nothing to look toward. Having hope keeps us going rather than ruins us. Hope can be a beautiful thing. :)

DeleteI'd definitely have to agree how being apart of this food blogging community has really given me a sense of comfort and belonging with others all across the globe who share interests similar to I. A simple comment or question on my blog really improves my day and it makes me feel grand to be able to assist another out there and communicate with others. You're right about hope, it's the only thing we have sometimes that can really make or break certain situations, but inevitably will always get us through the hard times :)
