some nights quick and easy needs to be on the menu.
i wanted to share with you one of our go to summer meals, that is quick, easy & cheap.
this year has been a banner year in the garden for green peppers, even if you don't grow your own, green peppers can be had at the cheap - i am sure most of us already have a few hanging around in the fridge.
this recipe is one of the rare ones that i break out the pepper jack daiya for - justin, well he likes his plain.
quinoa is a pretty quick cooking grain - 10 minutes cooking, then another 10 sitting covered, until all the moisture has been absorbed. by the time you have all your other ingredients prepped and chopped your quinoa should be just about done.
fresh corn from the cob, black olives and cherry tomatoes are added to the quinoa along with a prepared salsa. sometimes i like to add spinach or swiss chard to the mix. but when i made this i was starving, sweaty from my workout and couldn't find the five minutes to trample up to the garden to snip some fresh swiss chard - shame on me i know, but these were still really good.
the quinoa is mixed with the veggies & salsa, then stuffed into green pepper halves.
some are topped with pepper jack daiya, others are left a little naked.

i like to finish my peppers off with a few leaves of oregano.
2 peppers and a side salad make a pretty filling and satisfying meal.
it took a while for justin to warm up to stuffed peppers - he must have had a traumatic experience with stuffed peppers growing up
. i really don't ask cause' i want him to continue eating my version, which he does so happily.

Mexican Quinoa Stuffed Peppers
serves 4 - 1 pepper/2 halves per person
you will need:
1 cup water + 1/2 cup quinoa rinsed
4 medium green peppers, cut in half & seeded
1 cup cherry tomatoes, quartered
1/2 cup black olives sliced
1 corn on the cob, kernels removed (about 1/2 cup)
3/4 tsp cumin
3/4 tsp kosher salt
1 cup prepared salsa
daiya optional but highly recommended
oregano for garnishing
assembly:
bring water to boil in a small sauce pan, add rinsed quinoa, cover and cook on low for 10 minutes. turn off heat and allow to sit for 10 minutes.
meanwhile, prep your green peppers, corn & tomatoes - place in a medium bowl.
slice olives and place in bowl with rest of veggies.
arrange green pepper halves on a rimmed baking sheet, cute side up. add cooked quinoa to the veggie bowl along with prepared salsa, mix well. fill each pepper half with as much quinoa as you can.
top with slices of daiya - bake in a 350* pre heated oven or toaster oven for 20-25 minutes.
garnish with oregano.
enjoy!

i am making this FOR SURE. my mom used to make stuffed peppers when i was little. it was filled with ground beef, tomato sauce, and onion and i LOVED IT. after i went vegan, she made them with crumbled tofu, because she's amazing. but i haven't eaten them in probably 7 years. i also how quick these take to make. i TRY to make dinner within 40-45 minutes, but i usually takes an hour.

DeleteAren't parents the best - both my mom and dad embraced the whole vegan lifestyle choice with open arms...my entire family actually did- they LOVE trying vegan food at our family get togethers :)
This looks fantastic! Love the addition of pepperjack Daiya- I haven't tried the wedges yet! I adore quinoa and salsa and... pretty much everything in this recipe. Can't wait to try it. I still can't get over how good that Cinna Ring looks from the previous post!

I love stuffed peppers! Mine usually lean toward Italian flavors, but I am really digging your Mexican peppers idea. I'll have to try these! On week nights I usually have about 30 minutes to make dinner. I plan my "fancier" meals for the weekends and take my time then. :)
ReplyDeleteThis recipe is one of those recipes that came about when I had almost nothing to work with for dinner so I started throwing together what I had on handa nd it turned out be be these and they were fabulous! I haven't made stuffed peppers anyother way since....but I do love my Moms more Italian Style Peppers!
Deletethat is pure deliciousness. you know yesterday my refrigerator was empty. there was just some greens and 1 tomato and nothing else, coz we dint get to the grocery shopping on the weekend. finally got some yesterday late night and picked up a bunch of peppers! i need to go back and get some pepperjack daiya. the cheesy melt looks so good on the stuffed peppers!

Hahaha I have been there Richa when the inside of the fridge just looks so sad....I am not a fan of grocery shopping at all - this time of year though 95% of our food comes from the Farmers Market which I love and am really going to miss...but some of my weekly farmers have told me they are experimenting with greenhouse year round growing which is so Awesome!

ReplyDeleteAs for stuffed veggies - I don't remember liking stuffed peppers as a youngun, but I adore them now. Stuffed peppers, or mushrooms, are probably my favorites. Or Chile Relleno, if that counts. :P

I've never made stuffed veggies myself, but my sister has made stuffed peppers and stuffed tomatoes. I think if I did try them, I would go for something like what you made - I would want a protein-rich filling like quinoa, and the Mexican flavours compliment everything perfectly!

In reality, it takes about an hour or more. There are occasions when I get my act together and can pull a quick dinner off, though. :-)

Hahaha I always "imagine" the same thing - but also I do often times get sidetracked when I am cooking dinner, as I am sure it is for you too, Cooking is my relaxation time so I am never in a hurry :)

These look awesome. You know me...I adore anything with Mexican flavours. And quinoa. And I finally love peppers. As a kid and a teenager, I would not go near a pepper to save my life. *HAH* Thankfully times have changed and I love pretty much every veggie out there. I've been wanting to try stuffed peppers. My mom would always make stuffed peppers when I was a kid. She would just serve me a bowl of the stuffing and I was happy. *hah* I think it's time I tried the whole thing. :)

DeleteI've been getting loads of peppers from my CSA this summer - I've stuffed them with lentils, rice, & sun-dried tomatoes, did another variation with soy chorizo, black beans & corn, & my favorite was chocolate peppers stuffed with mediterranean orzo. I usually boil or roast my peppers first to soften them up, then add the stuffing & cheeze & put under the broiler! This quiona mixture looks lovely & I'll definitely be giving your recipe a try when I receive that next bag of peppers!

I just served this for my family. We all loved it!! I did change the recipe a bit. I added chicken, kalamata olives rather than black, added cumin, red cayenne pepper and black pepper. Then I topped it with feta cheese and garnished with cilantro.
