tabbouleh + one lovely blog award

one of my most favorite birthday traditions is going to the ocean with my mom, gram and sister.
this has been our tradition since my 24th birthday - it is one that i hope we continue for many years to come. instead of feasting on greasy boardwalk eats we like to pack a lunch to bring along - so much tastier and not to mention healthier.

there is nothing better than blue sky's, sun, family and jumping through the waves - well maybe this tabbouleh might rank in at a close second.

have i told you how much i love having a garden - just a few quick steps and i had the perfect beginnings of homemade tabbouleh.
cucumber, red onion, cherry tomatoes, parsley, oregano and chives.
a bit of fresh lemon, olive oil, salt and bulgar and you have yourself a wonderfully fresh and simple lunch.

i am told traditional tabbouleh requires you to finely chop all the ingredients, almost to a mince.
i personally prefer a "chunkier" tabbouleh

once made and assembled this keeps really well for a few days - that is if it lasts that long.
if i know a hectic week is coming up i like to make a double batch to the last the week for quick and easy lunches & dinners. a few pitas, lettuce and if you are feeling saucy a bit of hummus makes for a filling super good for you meal.

also super delish when enjoyed with seedy or wheat crackers .
i love the fresh herbs and the brightness of loads of lemon juice.

before i let you lovelies go i was so awesomely bestowed the one lovely blog award from 
Sarah @ Inside & Out. i have to say that i have met some awesome bloggers through this award. sarah is a pretty amazing lady and has an awesome blog- if she hadn't contacted me who knows how long it would have been before i found her blog, same with gabby from the veggie nook- two people that i am so glad to have met all thanks to this blog. part of this award is to list 7 random facts about yourself - so here it goes:
1. i am almost just as obsessed with flowers as i am food - i love the way the yard smells just after a summer rain and the perfume of the flowers envelopes you
2.  i really, really want a beach cruiser
3. i am trying really hard to find the motivation to stick with a running program
4. i absolutely love fall hiking and long drives in the fall on NH back roads
5. i am totally into reiki
6. i am so bad at remembering names of bands and songs - i am clueless

so, i would like to pass this award along to:

Tabbouleh
serves 4 for lunch or 6 as an appetizer

you will need:
1/2 cup bulgar + 1 cup water
1 cucumber peeled and cubed
1 cup cherry tomatoes, halved or quartered
1/4 cup parsley, minced
2 tbsp oregano, minced
1 tbsp chives, snipped
2 tbsp red onion, minced
1/3 cup extra virgin olive oil
juice of 1 large lemon
salt to taste

for serving
pita
lettuce
hummus

assembly:
in a small sauce pot bring 1 cup of water to a boil, add bulgar & cover - simmer on low for approximately 10 minutes. remove from heat and allow to stand covered while preparing remainder of recipe.

in a large mixing bowl add all your prepped veggies, toss with minced herbs.
add the bulgar on top of herbs, drizzle olive oil and lemon juice over the bulgar.
toss all ingredients together ensuring all ingredients are distributed evenly.
season with salt - serve warm or store in fridge until ready to serve.
best made the day prior, allowing the flavors to mingle.

serve with pita, hummus & lettuce

enjoy!

  2. Yum! :) Love tabbouleh! The flavours are always so fresh and clean. A restaurant close to my condo sells delicious tabbouleh. They top it was marinated banana peppers and balsamic drizzle and serve it with homemade hummus, falafels, pita wedges and a side salad with tahini dressing. One of my favourite things ever! :)

    What did you think of Survivor? I read that book a few years back after I first read Fight Club by the same author. Right now in book club, we are doing "Reader's Choice" where we all read a different book and then review our own choices at the next meeting. We do that once a year which opens everyone up to new books to try. And then everyone can choose something that has been on their list for a while. I'm reading A Secret Daughter. I'm halfway through and it's really good :)

    1. I so agree with you Court - you live near the best restaurants, I think I need to come visit you and we can do a whole eating weekend!

      I LOVED Survivor but I am a big Chuck Palahniuk Fan and so is my sister - the other members of the group weren't huge fans...he is kind of out there :) I love the idea of Readers choice, what a great idea, I think I will suggest that at out next get together :)

  3. what a beautiful "chunky" tabbouleh! it looks so light and refreshing and i can't wait to make it with quinoa ;)

    on another note, dayv and i could be considered hardcore chuck palahniuk fans. i LOVE survivor. it's one of my very favorites. if you are interested in reading more of his stuff, i highly suggest invisible monsters and choke. even thought fight club is one of my favorite movies, it's one of my least favorite of his books. choke, on the other hand, didn't translate particularly well to theater, so read the book and skip the movie ;)

      LOVED Invisible Monsters...have not read choke but just downloaded it onto my Kindle, thanks for the reccomendation! hahaha I had no idea that there was a movie called choke :)

  5. I too prefer my tabouli chunky. In fact I prefer most things chunky, although maybe that's more laziness on my part ;)

    Congrats on the award and thanks for the shout out! You are very deserving and I am so glad we have connected through our blogs. Your posts inspire me everyday and I look forward to the day when we can actually cook for each other!

    And I am sooo clueless about song names and bands too! It's actually really embarrassing- because even the most popular songs and groups evade me. I'm glad to hear I'm not the only one!

    1. Hahaha I really didn;t have the patience to cut up everything really small but I do prefer the chunky style versus the diced - I am happy to hear I am not alone!

      Cook for each other- YES, or cook together that would be even more amazing :)

  10. Whew! I am so glad to find that I am not the only one who is clueless when it comes to music. I can remember the words sometimes, and I think I've got a firm grasp on Beatles songs and a selection of old-school hip-hop songs, but other than that... clueless.

    I also prefer my tabbouleh chunky- I like a variety of textures. This looks fantastic! I'm happy you had a great birthday too. :-)

    1. Totally not alone - haha I think I am pretty good with Led Zepplin and all the 1970's hits, throw in a few 80's and I would do okay :) Justin is the complete opposite, even my Dad is more up to date with the music scene than I am!
